Perfect Recipe for Fall!

Finally!!! My favorite time of the year is here!!

What’s not to love about fall? The leaves are turning colors, the mornings are cooling down. But my favorite part is all the yummy recipes we have been putting off all summer. Who really wants to eat soup when its 90 degrees out? Certainly not me!

Currently all the little ones are in bed and I am curdled up on the couch with a hot cup of tea and a cozy blanket. I don’t think life could get any better then this. Having young children dinner can become quite tricky at times. I think it is safe to say that ALL families have picky eaters at some point. It can become so frustrating! However tonight’s dinner I didn’t hear a single compliant from anyone! Hallelujah!!!!

Crock-pots are my best friend this time of year, especially when making roasts. Letting them slow cook all day, I feel like they always get more tender then cooking in the oven. Besides who doesn’t love the whole house smelling yummy all day while it cooks!  This simple set it and forget it recipe is my go-to for week day dinners!

Basic Slow-Cooker Roast

Ingredients:

2-3 pound roast (I used a shoulder roast, but any beef roast will work)

1 packet of Lipton Onion Mix

32 oz beef broth

1 onion, chopped

5-6 potatoes cut up into chucks ( I used yellow this time, but red potatoes would work great to)

1 1/2 cups of baby carrots

2 tablespoons minced garlic

Place the roast into the crock pot. Adding broth, lipton packet and garlic.

One hour before serving, add vegetables ( I have tried putting it all together and i ended up with mushy veggies.. yuck!!)

This recipe is soo simple, but it tastes delicious and your whole family will love it!!
